(RECIPE) SEAFOOD RISOTTO

Sometime I wonder with my self what kind of food do I really like the most, because there are so many food that I've tried. From street food to Five Start Restaurant, I thought all of them have a huge different things, yes if we talked about ambiance, presentation, prestige and many more, but if we talked about "TASTE" I do believe that all the food no matters it comes from or whom made it, they have their own uniqueness and the taste is still good, isn't it?. 



I won't talk about taste, cause I do believe everyone have their own taste and your taste could be more good rather than me, but maybe we can have the same perception about food that made by our self in our kitchen, if you really did, it feels like you passed the final exam. The taste, presentation could be different, but you have something to proud off for your self. So I just inspire by someone who can cook really good, and I challenge my self to do my food list every sunday, yeaaa it's like #SundayProject for me. And this time, I would like to share what I did last week, it's Seafood Risotto Recipe. You can try and challenge your self to do make this, because Seafood Risotto is a lil bit hard for me. Enjoy.










INGREDIENTS:
- 1 pound (2 cups) arborio rice or medium-grain white rice
- 6 cups seafood or fish stock
- 1 tablespoon olive oil
- 1 cup chopped onions
- Salt 
- Freshly ground white pepper and black pepper
- 2 garlic cloves, minced
- 2 tablespoons butter
- 2 tablespoons chopped garlic onions.
- 1/4 cup heavy cream 
- Chopped fresh parsley leaves (optional if you don't like it)
- 2 pounds shellfish and seafood.
- Cheese.

HOW TO COOK:

1. Prepare a large saute pan, and heat the oil / butter over medium heat. Add onions, salt and pepper, cook and stirring.
2. Saute the onions until are slighty soft, around 3 minutes and smells good.
3. Add the seafood / fish stock, garlic and simmer around 3 minutes with medium heat.
4. Add the rice and simmer again for 15 minutes, don't forget to stirring constantly.
5. Make sure the shellfish and seafood all are clean, add some salt and pepper. Continue to cook around 10 minutes.
6. Stir in the butter, cream, cheese and green onions. Simmer for 2 minutes and stirring constantly again.
7. Remove from the heat, spoon the Seafood Risotto to bowl and served with parsley.

Total Time (50 minutes)
Prep : 15 minutes
Cook : 35 minutes
Level : Easy - Medium
Yield : 8 Servings
